Open Faced Beef Taco's

I made the tortilla's from the Wheat Belly Cookbook. The recipe actually makes 4 - we used 2 on the first day and just kept the "dough" in the fridge overnight and rolled it out and cooked it fresh on Day 2. It worked awesome - I would do this again. They are pretty flaxy tasting but it gives you that feeling that you ate something hardier (which hubby is struggling with in giving up his pasta/rice/bread) than just salad.

I fried ground beef with fresh minced garlic, onions (of course), cumin, chili powder, sea salt, black pepper and diced fresh red peppers.
