Creative Creamy Carrot and Sausage Soup

With a little cheese!
Okay still didn't get to the grocery store - really running out of groceries now...........so I had some farmers sausage to use up and pureed cauliflower that I never did figure out how to "sneak" into the kids food.  When all else fails make an omelet or a pot of soup. Since its so cold outside I went for the soup....

Creative Creamy Carrot and Sausage Soup
1 tbsp coconut oil
1 clove garlic, minced
1 stalk celery, chopped (about 1/3 cup)
1/3 cup minced onion
1 cup farmers sausage (or ham/bacon/whatever meat would work)
1 large carrot (2/3 cup), peeled and chopped
1/2 tsp sea salt
pepper to taste
2 cups chicken broth
1 cup pureed cauliflower (steamed cauliflower that is pureed)
1/2 cup half and half cream
parsley for garnish

Fry oil, garlic, celery and onion on medium until softened. Add sausage, carrot, salt and pepper. Fry for 2 - 3 minutes. Add chicken broth and simmer until carrots softened (about 10 minutes). Add cauliflower/cream and cook until warmed through. Garnish with parsley and cheese (optional).
