Holy Guacamole!!

Fresh and tasty! Avery will actually eat my guacamole - given she is in an "I don't like anything or anyone" phase that's a big deal. Had an avocado that was almost past its prime so whipped us some guacamole and thought I would share my recipe since its so simple, fresh and delicious. I serve with gluten-free chips, celery, carrots or as a side with any Mexican main course, omelets or really anything because I love it.

Chanty's Holy Guacomole
 1 ripe avocado - mashed (leave it a little chunky for texture)
1 clove garlic - finely minced
1 green onion - chopped
1 tbsp lemon juice
1 tbsp cilantro (I'm currently using the kind that comes in a tube in the refridgerator section at Safeway), fresh or dried is fine as well or just leave it out if you have to
1 medium tomato chopped (or a couple of tbsp of salsa if you are out of fresh)
sea salt to taste

That's it. Just mash your avacado, add the rest of the ingredients, mix it all together and put it in the fridge. I like to let it sit for an hour or so before serving to let the flavours mingle a bit.
