The Perfect Patty - Beef and Pork Grilled Paleo Burgers


A perfect base recipe for a grilled pork and beef burger patty! Tender, juicy and delicious. Wheat-free and kid-friendly!
I almost killed myself walking back and forth to the barbecue tonight - there is a very dangerous, slippery sheet of ice on our deck. I got "rained on" as the snow is melting directly onto the bbq and barbecuer.  We can't move it because it's in a snow bank and seems to be frozen to the ground. But it was WORTH it for these delicious burgers. They were soooooo juicy tender and the taste of grilled hamburgers on March 1 in Winnipeg is a rare delicacy.

Everyone needs to learn to make a good burger patty so they don't need to buy the processed - half fatty beef, half cardboard variety, that comes in a frozen package. And here is a simple base recipe for you. You could doctor it up with different spices if you want (Italien seasoning, curry, Mexican spices, whatever). There are few techniques you need to apply that are key to making sure they turn out perfectly - if you don't follow these tips they may turn out like little hockey pucks. In which case bring them over since we appear to have a skating rink in our backyard.

1) DO NOT OVERMIX. Just mix the ingredients together as gently as you can until just combined and then stop. Walk away.
2) Make a couple of finger imprints in the middle of the burger once you form them into patties. When the burger inevitably shrinks this keeps it from turning into a ball.
3) Use a mixture of half beef and half pork. Lean as you can find for a good price.
4) Only turn the patties once on the bbq. I want to lose it when someone doesn't want to bbq or help with dinner at all and then they go over and randomly flip the meat. Major pet peeve.

They also freeze well. Just form them into patties and freeze them raw with wax paper between each patty. Then you have a meal for another day. We ate 7 and froze 4.

Beef and Pork Grilled Paleo Burgers - The Perfect Patty

Cook Time: 20 minutes

Ingredients (10 or 11 patties)
  • 1 lb lean ground beef
  • 1 lb lean ground pork
  • 2 small cloves garlic, minced
  • 1/3 cup onion, finely minced
  • 1/2 tsp fine sea salt
  • A few dashes of black pepper
  • 1 egg
  • 1/4 cup ground golden flax
Instructions
Preheat the grill - medium/high heat.
Throw all the ingredients into a mixing bowl and gently combine all the ingredients until JUST combined.
Form into patties.
I use about 1/3 cup of mixture for each patty. Press a couple thumbprints into each patty.
My bbq was about 375 degrees and I cooked them for about 10 minutes per side. Remove from grill and serve with toppings of your choice.

Today I ate mine on some butter lettuce in place of a bun and I grilled some peppers to go on top. I didn't miss the bread - really I didn't.

You can buy butter lettuce to use instead of a bun. And its easy to grill some peppers while you have the bbq going. 
I'm going to experiment with some sugar free bbq sauce recipes as spring approaches and grilling season is in full swing. I have one you can try if you need something now - Mama's modified Wheat Belly BBQ sauce - that I put on some ribs a while back.
