Oven Roasted Sweet Potato Heat

Hot and Saucy and ready to eat!
I love love love sweet potatoes (hello - sugar addict - I will take it where I can get it). Unfortunately no one else in my family is.....but my hubby has resigned himself to the fact that he will be getting them once every week or two because 1) if I gave up milk chocolate I am going to get my sweet fix somewhere and 2) I'm the one cooking. He doesn't want to admit it but I think he is starting to like them.  Here is what I did today:

Oven Roasted Sweet Potato Heat

2 large sweet potatoes, peeled and cubed
2 tbsps extra virgin olive oil
1 tbsp butter, cubed into small pieces
1/2 tsp paprika
1/4 tsp chili powder (more if you like heat)
1/8 tsp chipolte seasoning (optional)
sea salt and pepper to taste
Parsley - dried or fresh for colour

Preheat oven to 375 degrees. Put cubed potatoes on 9 x 13 pan. Drizzle with oil and spices and combine. Add cubed butter to top and garnish with parsley flakes. Bake in oven (covered) for about 35 minutes or until tender. I like mine really well cooked/soft but that's an individual preference.
